New Fine Dining Experience at Knipoch House Hotel With the Launch of ‘1635’

With a focus on showcasing the very best of Scottish produce, their new restaurant 1635 offers a high-end dining experience that immerses your senses in the flavours and history of the region.

A Tribute to Scotland: ‘Taste of Scotland’ Menu

Led by Chef Andrew Engledow, 1635 offers a seven-course fine dining ‘Taste of Scotland’ menu, blending the finest local ingredients with seasonal flavours from across the country. The menu changes every 4 weeks, at the time of writing guests can experience the following distinguished menu:

  • Amuse Bouche: Shetland Scallop with artichoke, black olive, lemon, and celery, paired with Tissot-Maire Blanc de Noirs Cremant du Jura Brut NV.
  • Starter: Fife Roast Partridge with bitterballen, corn, and granola, paired with Pinot Noir Elephant Hill 2020.
  • Pre Main: Orkney Halibut with ginger velouté, seaweed leek, and mushroom, paired with Semillon Constantia Uitsig 2021.
  • Main: Wild Argyll Venison Loin with truffle salsify, red cabbage, and ragu, paired with Parterre Cabernet Sauvignon Fraser Gallop Estate 2019.
  • Pre-Dessert: Tain Blue Murder with pear, smoked almond, and crisps.
  • Dessert: Cranachan Soufflé with raspberry sorbet and whisky, paired with Saint Albert Producteurs Plaimont Pacherenc du Vic Bilh 2018.

Historical Roots of Knipoch House Hotel

The restaurant’s name, 1635, is a nod to the rich history of Knipoch House Hotel, which dates back to the 16th century. The year 1635 is particularly significant due to a plaque found on the house’s exterior, originally installed for tax purposes. The name ‘Knipoch’ itself, derived from Norse meaning ‘hilly place’, reflects the area’s Viking past.

Knipoch House is surrounded by history, with connections to Scottish legends such as Robert the Bruce and the Road of the Kings, a route used by monarchs journeying to their final resting place on Iona. The hotel’s historical significance also includes tales of betrayal and murder within the Campbell Clan, adding an intriguing backdrop to the modern culinary experience at 1635.

Knipoch House Hotel, acquired by the Sonas Collection in early 2024, underwent a £1 million renovation that carefully balances the building’s historical features with modern luxury. Guests can enjoy the charm of stone walls, fireplaces, and wood-panelled interiors, all while indulging in contemporary comfort.
